Making the Ice

Wash the silicone mold thoroughly with soapy warm water
Use Filtered Water for great tasting ice
To speed up the freezing time: Start with chilled water filled with crushed ice
To minimize trapping bubbles, slowly fill each fin cavity to the "Fill Line" using a measuring cup or glass.
Place the tray on a solid surface (use a tray if your freezer has metal racks)
Place the tray on a level surface in the freezer to ensure even freezing
If a larger ice is desired, fill to the rim and place the silicone mold on a tray to help with the transport and reduce spillage
Freeze for 4-6 hours to ensure the center is fully frozen

Easy Removal

Making the Ice

After removing the silicone mold from the freezer, run some warm water on the back side of each cavity for 20 seconds or more until the ice just starts to melt.

Place the mold upside down on a cutting board with the fins upright.

Release each Fin Ice by pushing down on both sides of the fin until the ice de-molds onto the cutting board.

When releasing CHOCOLATE BOMBS, it helps to freeze the chocolate to make it stronger for the release. Do run some warm water on the back side of the mold on each cavity long enough to soften the tray but NOT melt the chocolate. About 10 seconds works well.

Making it Last

Place the Fin Ice in pre-chilled drinks vs room temperature drinks

The ice lasts much longer when placed on frozen cocktails/drinks.

Center a slice of citrus in the mold when making the Fin Ice. The citrus will act as a float prolonging the life of the Fin Ice.

Color and Layer your ice in stages!
Use dark juices like grape or cranberry juice to reduce the amount of food coloring required to achieve black.
When using sugary juices, dilute them 50% by adding water for a stronger fin. (Sugar will make ice more fragile)
Fill the fin portion with the desired coloring and freeze.
Then add a second layer of water to the "fill line" and freeze again.
You will have the added benefit of color and style without the added color or flavor in your drink.
